Research & Development Food Lead

Research & Product Development
- Assist in developing new recipes & improving existing ones for better cost-efficiency and scalability.
- Ensure that all formulations are aligned with food safety regulations and HACCP standards.
- Conduct shelf-life studies & sensory evaluations to optimize product quality and durability.
- Research new ingredients, food additives, and preservation techniques to enhance product performance & profitability.
- Costing & Feasibility Study
- Conduct cost per SKU analysis, including raw materials, labor, overhead, and packaging.
- Work with Procurement & Finance to track ingredient price fluctuations and find cost-saving opportunities.
- Analyze production yield, food waste, and cost efficiency to optimize kitchen operations.
- Implementation & Work Instruction Development
- Develop Work Instruction (WI) for recipe execution, quality control, and food safety compliance.
- Conduct training sessions for production teams to ensure recipe consistency and adherence to SOPs.
- Work with Operations to create workflows for mass production and improve kitchen efficiency.
- Monitor and evaluate team performance in following recipe procedures and quality benchmarks.

- Minimum Qualifications: Educational Background: Degree in Food Science, Food Technology, or a related field.
- Experience: Minimum 3-5 years in R&D, food costing, or production operations in an F&B fast food or food manufacturing environment.
- Skills & Competencies:

- Strong understanding of food safety, HACCP, and food preservation techniques.
- Experience in food costing, margin analysis, and feasibility studies.
- Ability to develop SOPs and training materials for kitchen teams.
- Hands-on experience in recipe formulation and process standardization.
- Proficiency in Excel, ERP systems, and costing tools.
- Strong communication and training skills to ensure smooth knowledge transfer to kitchen staff.
