Research & Development Food Lead

• Research & Product Development
• Assist in developing new recipes & improving existing ones for better cost-efficiency and scalability.
• Ensure that all formulations are aligned with food safety regulations and HACCP standards.
• Conduct shelf-life studies & sensory evaluations to optimize product quality and durability.
• Research new ingredients, food additives, and preservation techniques to enhance product performance & profitability.
• Costing & Feasibility Study
• Conduct cost per SKU analysis, including raw materials, labor, overhead, and packaging.
• Work with Procurement & Finance to track ingredient price fluctuations and find cost-saving opportunities.
• Analyze production yield, food waste, and cost efficiency to optimize kitchen operations.
• Implementation & Work Instruction Development
• Develop Work Instruction (WI) for recipe execution, quality control, and food safety compliance.
• Conduct training sessions for production teams to ensure recipe consistency and adherence to SOPs.
• Work with Operations to create workflows for mass production and improve kitchen efficiency.
• Monitor and evaluate team performance in following recipe procedures and quality benchmarks.

• Minimum Qualifications: Educational Background: Degree in Food Science, Food Technology, or a related field.

• Experience: Minimum 3-5 years in R&D, food costing, or production operations in an F&B fast food or food manufacturing environment.
• Skills & Competencies:
• Strong understanding of food safety, HACCP, and food preservation techniques.
• Experience in food costing, margin analysis, and feasibility studies.
• Ability to develop SOPs and training materials for kitchen teams.
• Hands-on experience in recipe formulation and process standardization.
• Proficiency in Excel, ERP systems, and costing tools.
• Strong communication and training skills to ensure smooth knowledge transfer to kitchen staff.
