Kami mencari seorang Head Chef yang memiliki kombinasi Keahlian Operasional Dapur dan Passion dalam Riset dan Pengembangan (R&D) kuliner yg unik & berkelas

Deskripsi Pekerjaan :

  • Memimpin dan mengawasi seluruh operasional dapur, mulai dari perencaan bahan baku hingga distribusi akhir menu ke customer
  • Mengembangkan menu baru (terutama western food, makanan Indonesia dan Fusion)
  • Mahir dalam administrasi dapur, termasuk stock opname, data harian, form harian dan lain nya
  • Menjaga kualitas rasa, presentasi dan standart kebersihan makanan sesuai dengan standart yang ada
  • Membuat, memelihara dan secara ketat mengontrol Receipe Costing, FoodCost dan penggunaan bahan baku agar tercapai target COGS yang di tetapkan
  • Melakukan uji coba resep , penyesuaian rasa dan standarisasi plating untuk semua menu baru sebelum di terapkan dalam produksi harian
  • Melakukan evaluasi kinerja serta pelatihan teknis tim kitchen secara berkala

Kualifikasi :

  • Pengalaman minimal 5 tahun di bidang culinary production. termasuk minimal 2 tahun di posisi managerial (setara Senior Sous Chef atau Head Chef)
  • di utamakan yang memiliki passion kuat pada western food dan eksplorasi fusion
  • Terbiasa membuat Standart Recipe, costing dan mengatur ulang produksi
  • Memiliki Leadership yang kuat , terampil dalam komunikasi dan mampu mengelola tim dapur
  • Berpikir kreatif, Inovatif serta memiliki analisa rasa yang tajam dan sense of presentation yang tinggi
