CHEF DE PARTIE (CDP) – PASTRY & BAKERY

Job Description

  1. Membantu Head Pastry & Bakery dalam pengembangan dan inovasi produk baru.

  2. Melaksanakan produksi pastry & bakery harian sesuai resep dan standar kualitas.

  3. Menjaga konsistensi rasa, bentuk, dan tampilan produk.

  4. Mengatur dan mengawasi kinerja tim di section pastry & bakery.

  5. Memastikan ketersediaan bahan baku dan kebersihan area kerja.

  6. Melakukan quality control sebelum produk disajikan.

  7. Membimbing Commis & Helper terkait teknik dasar dan SOP kerja.

  8. Menerapkan standar higienitas dan keamanan pangan (HACCP & GMP).

  9. Membuat laporan harian produksi dan pemakaian bahan baku.

  10. Berkoordinasi dengan Head Pastry & Bakery untuk menu baru dan evaluasi produk.

Qualifications

  1. Pendidikan minimal SMK Tata Boga, diutamakan Diploma/Degree Culinary.

  2. Pengalaman minimal 1 tahun sebagai CDP atau 2 tahun sebagai Demi Chef Pastry & Bakery.

  3. Menguasai teknik dasar & lanjutan pembuatan pastry, bread, viennoiserie dan dessert.

  4. Mampu bekerja cepat, rapi, dan presisi.

  5. Memiliki jiwa kepemimpinan dan mampu bekerja dalam tim.

  6. Mengetahui standar food safety & hygiene (HACCP, GMP).

  7. Kreatif, disiplin, dan memiliki passion di bidang pastry & bakery.
