Company Description
Mookie, inspired by American-style bakeries, is based in Jakarta, Indonesia. Founded in 2016 by Rahma Putri, Mookie is a food startup company legally known as PT Mookie Titik Terang. We sell premium soft chewy cookies, cakes, pudding, and truffles with the mission to share happiness around the world. Our baked goods and Mookie characters aim to inspire and bring joy to others.
Role Description
The General Manager is fully responsible for the operational, financial, human resources, product quality, and business growth performance of all brands under Mookie Holding. This position ensures that each brand operates efficiently, profitably, and in alignment with the company's strategic direction.
Qualifications
Minimum 3–5 years of experience as an F&B GM/Ops Manager.
Strong understanding of kitchen operations, food safety, and stock management.
Able to manage budgeting and analyze operational reports.
Strong leadership, fast problem-solving, and data driven.
Job Description
Operational
- Ensure all outlets operate in accordance with SOPs and quality standards.
- Develop, update, and implement SOPs for three brands.
- Oversee stock management, waste & loss control, and kitchen–store workflow.
- Conduct routine operational audits and follow up on findings.
Finance & Performance
- Collect and analyze weekly and monthly reports.
- Control COGS, labor cost, waste, and operational expenses.
- Prepare sales forecasts and operational budgets.
- Oversee purchasing cash flow and vendor management in coordination with the finance team.
People & HR
(in collaboration with the HR Team)
- Lead store, kitchen, and head office teams.
- Coordinate recruitment, onboarding, training, and performance evaluations.
- Manage manpower planning, coaching, corrective actions, and shift scheduling.
Product & Quality Control
- Maintain consistency in taste, presentation, and product quality across outlets.
- Collaborate with the chef on product development and evaluation.
- Manage customer feedback and develop action plans.
Supply Chain & Inventory
- Manage the supply flow between kitchen–store–supplier.
- Ensure accurate daily and weekly stock reconciliation.
- Negotiate with vendors regarding quality and pricing.
- Oversee an effective and transparent purchasing process.
Strategic Growth & Expansion
- Participate in planning and opening new outlets.
- Prepare operational blueprints and manpower requirements for new outlets.
- Design sales improvement strategies together with marketing and related teams.
Customer Experience & Brand Alignment
- Ensure consistent service standards and customer experience.
- Work with the marketing team on campaigns and sales-boosting programs.
