DESKRIPSI PEKERJAAN :

  • Mengawasi dan mengatur kegiatan dapur sehari-hari
  • Memantau kebersihan area kerja dan memastikan penerapan food safety (HACCP)
  • Memimpin, membimbing, dan memberikan pelatihan kepada tim sushi chef dan kitchen crew.
  • Menjadwalkan shift kerja dan membagi tugas sesuai kemampuan staf
  • Menilai kinerja tim dan memberikan umpan balik secara berkala
  • Memastikan bahan baku selalu segar, berkualitas, dan sesuai kebutuhan
  • Mengontrol inventori, melakukan pemesanan, dan meminimalkan waste
  • Berkoordinasi dengan pemasok terkait kualitas ikan dan bahan sushi lainnya
  • Menyusun laporan harian produksi, pemakaian bahan, dan stok
