The
Sous Chef
serves as the second-in-command in the kitchen and supports the Executive Chef in daily operations at Bumi Aki Heritage Kemang. This role is crucial in supervising the kitchen team, maintaining the authenticity of Indonesian cuisine, and ensuring that every dish reflects the traditional flavors and recipes that define Bumi Aki Heritage.
Job Descriptions:
- Lead and supervise daily kitchen operations, ensuring smooth workflow and high productivity.
- Maintain the authenticity and quality of Indonesian dishes according to established recipes, taste, and presentation standards.
- Assist the Executive Chef in menu planning, food costing, and sourcing of ingredients, with a focus on local and traditional products.
- Control inventory, monitor ingredient usage, and minimize food waste.
- Train, guide, and evaluate kitchen staff to ensure consistency and high standards.
- Ensure compliance with food safety, hygiene, and sanitation regulations in all kitchen processes.
- Support the Executive Chef in introducing innovations while preserving authentic Indonesian culinary traditions.
- Collaborate with service teams to deliver an excellent dining experience for guests.
Job Requirements:
- Minimum Diploma (D3) in Culinary Arts, Hospitality, or a related field.
- At least 3 years of experience as a Sous Chef or equivalent role in restaurants or hotels, preferably with Indonesian cuisine.
- Strong leadership, communication, and team management skills.
- In-depth knowledge of authentic Indonesian recipes, cooking techniques, and local ingredients.
- Understanding of food safety, hygiene, and sanitation standards in F&B.
