- Analyze and explain variances of actual vs budgeted F&B cost
- Ensure profit and loss (P&L) accuracy by consistently balancing restaurant expenses for overspending or miscoding.
- Facilitate monthly profit and loss (P&L) critiques with management to discuss shortfalls in revenue production and overspending.
- Provide weekly F&B cost and revenue forecasts.
- Produce on-demand F&B control-related reports/recommendations.
- Support target analysis and budgeting processes.
- Develop and implement improvements and cost-cutting measures to existing operating procedures to maximize efficiency without compromising quality.
- Ongoing monitoring and reporting of cost and controls within the group.
- Esta Ensure Cost of Good Sold (COGS) - Beverage calculation is done after each Cash Bar function.
