Nestled in the cliffs of Uluwatu, Bali, Heritage Boutique Hotel is a serene retreat where Indonesian culture, refined design, and meaningful guest experiences come together. With 20 elegantly crafted rooms, a fine dining restaurant (Mr. Gusti), a tranquil yoga studio (Miss. Bu), elevated poolside hospitality, and F&B services supporting 29 private villas, Heritage blends modern luxury with authentic Balinese heritage. As a rapidly growing boutique hotel brand, our mission is to create unforgettable stays through personal service, cultural storytelling, and a seamless harmony of comfort, taste, and style — both for hotel guests and villa residents.
Role Overview
The F&B Manager leads and oversees all Food & Beverage operations for Heritage Boutique Hotel and the supported villa services. This role has full responsibility for operational performance, people leadership and financial results across all F&B profit centers. The Culinary Director reports into the F&B Manager, and the two work in close partnership to ensure seamless alignment between kitchen and service, strong outlet concepts and consistent brand execution. The F&B Manager plays a key role in the pre-opening phase, setting up systems, service standards, team structures and operating procedures, and continues to drive performance after opening in close collaboration with the General Manager and leadership team.
Key Responsibilities
• Lead all daily F&B operations across restaurant, bars, pool service, in-room dining and in-villa dining
• Provide direct leadership to the Culinary Director, Outlet Managers and Supervisors
• Build a strong FOH and BOH leadership structure with clear roles and accountability
• Work in close partnership with the Culinary Director on menu implementation, service pacing, kitchen–service coordination and outlet concepts
• Lead pre-opening setup including SOPs, service design, staffing plans, equipment readiness and soft opening execution
• Set and monitor service standards, guest experience flows and operational rituals
• Manage F&B budgets, forecasts, purchasing, inventory and cost control systems
• Implement recipe costing, beverage costing and menu engineering to optimize margins
• Control payroll, productivity, scheduling efficiency and staffing models
• Recruit, train and develop F&B teams in collaboration with HR
• Drive upselling, promotions, events and outlet activations together with Sales & Marketing
• Ensure compliance with hygiene, food safety, alcohol regulations and HACCP standards
• Handle guest feedback, complaints and service recovery professionally
• Prepare operational and financial reports and contribute to leadership meetings and planning
Requirements
• Degree or diploma in Hotel or Hospitality Management is required
• Proven experience as F&B Manager or strong Assistant F&B Manager in a luxury or upscale hotel
• Pre-opening experience in multi-outlet operations is a strong advantage
• Strong knowledge of F&B cost structures, menu engineering and operational profitability
• Highly competent in administration, inventory systems and supplier management
• Confident working with spreadsheets, purchasing systems and hospitality reporting
• Proven ability to lead both FOH and BOH leadership teams effectively
• Strong understanding of contemporary F&B trends, wine and mixology
• Fluent in English and Bahasa Indonesia
• Highly organized, hands-on, decisive and guest-focused
