One of our clients is a unique, lifestyle café & bar venue in Uluwatu, Bali that blends 1970s surf-culture spirit with a laid-back café and bistro vibe, looking for an Executive Chef to join their team.

The ideal candidate brings extensive hands-on kitchen leadership, strong operational management, and the ability to mentor and elevate a young team. You are a builder of systems, a trainer, a problem-solver, and a leader who can balance creativity with consistency, COGS control, and scalable operations across multi-venue environments.

Requirements :

  • Open for local and expat candidates.
  • Minimum 10 years of progressive culinary experience, with proven leadership as Executive Chef or Head Chef.
  • Strong experience in high-volume cafés, casual dining, or lifestyle F&B concepts.
  • Demonstrated ability to build kitchen SOPs, workflows, and scalable operational systems.
  • Proven track record in managing COGS, cost control, purchasing, and inventory.
  • Experience training, mentoring, and developing junior chefs & co-heads.
  • Ability to oversee multi-venue kitchen operations.
  • Strong understanding of kitchen design, equipment selection, and pre-opening processes.
  • Highly organised, structured, and able to manage multiple priorities and timelines.
  • Excellent communication and leadership skills leads with respect and professionalism.
  • Based in Bali or willing to relocate.

Responsibilities :

  • Work closely with the GM to ensure both Co-Heads run their kitchens efficiently, including administrative tasks.
  • Review and update all kitchen SOPs to enhance consistency, hygiene, and workflow.
  • Evaluate current systems and implement improvements for prep, service, and kitchen flow.
  • Restructure team roles, responsibilities, and station distribution to match operational needs.
  • Oversee daily kitchen performance through the designated co-head chef.
  • Ensure food quality, portioning, and presentation consistently meet brand standards.
  • Lead all kitchen administration including:
  • COGS management & food cost analysis
  • Supplier management & purchasing
  • Inventory control and stock rotation systems
  • Kitchen payroll, scheduling, and manpower planning
  • Ensure accurate purchasing, order tracking, and supplier performance.
  • Maintain strong cost discipline while supporting menu creativity and quality.
  • Hire, train, and onboard the full kitchen team.
  • Recommend layout improvements and support renovation planning from an operational perspective.
  • Provide equipment selection and procurement advice.
  • Adapt and modify the existing menu to suit daytime-only service format.
  • Oversee pre-opening checklists, kitchen setup, and operational readiness.
  • Guide and mentor young co-head chefs, improving their leadership and technical skills.
  • Implement structured training programs on cooking techniques, food safety, and kitchen standards.
  • Build a positive, disciplined, and high-performance kitchen culture.
  • Ensure strong communication, task delegation, and follow-up across both venues.
